1 or 2 heads of cauliflower
2 tsp kosher, coarse salt
1 – 8 oz pkg. Philadelphia cream cheese
1 stick unsalted butter
1 Tbsp Lawry’s seasoned salt ( to taste )
1 Tbsp smoked paprika
Cut cauliflower into florets and place into boiling salted water until very tender. Set oven to bake at 350 degrees.
Drain water from pot, leaving the cauliflower. Add cream cheese and butter. Using an immersion blender, blend until creamy and smooth. Pour contents onto a sheet pan covered with foil. Use a spatula to get all the creamy cauliflower from the pot onto the sheet pan. Sprinkle the smoked paprika over the surface of the cauliflower and place into the oven for 30-40 minutes, checking not to burn.
