Ingredients
- 2 Tbs Chili Powder
- 2 Jalapeño Peppers
- 5 Garlic Cloves
- 4 Cups Chicken Stock
- Red Onion (Garnish)
- Avocado (Garnish)
- Lime (Garnish)
- Cilantro (Garnish)
- 1 Pound Ground Beef
- 4 Green Tomatoes
- 1 Pound Canned Pinto Beans
- 2 Tbsp. Oregano
- 2 Tsp. Ground Coriander
- 1/2 of an Onion
Method
- Brown ground beef and add salt, pepper, chili powder, oregano, and coriander.
- Finely chop onion, mince garlic, and chop Jalapeño into slivers. Add to browning beef.
- Pour beef mixture into a stock pot.
- Pour chicken stock into beef mixture
- Chop and roast green tomatoes. Add them to the pot.
- Simmer pot contents for 2 hours. A few minutes before pulling it off the heat, add pinto beans.
