My Best Double Cheeseburger

Ingredients

  • Short Rib
  • Chuck
  • Brioche Buns
  • Butter
  • Sliced Cheddar Cheese

Method

  1. Begin by cutting the bone off the short ribs.
  2. Cut the chuck into approximately 2-inch pieces, leaving the fat intact.
  3. Place all the meat onto a pan layered with parchment paper.
  4. Transfer the pan to the freezer and let the meat chill for about 30 minutes.
  5. Once chilled, use a food processor or blender to grind up the meat until desired consistency is achieved.
  6. Shape the ground meat into large patties, forming them into approximately 5×5-inch balls.

Toast the Buns

  1. Spread 2 tablespoons of butter evenly on the bottom of a separate pan.
  2. Cut the brioche buns in half and place them cut-side down in the pan to toast and absorb the butter.
  3. Set the toasted buns aside.

Cook the Burgers

  1. In the same pan, cook the burger patties. Use your hands or a spatula to flatten them if they are still firm.
  2. Add a dash of olive oil, salt, and pepper to each side of the patty for seasoning.
  3. Place a slice of cheddar cheese on top of each patty.
  4. Cover the pan and let the cheese melt into the meat for a few minutes. 

Layering the Burger…

  1. Add a layer of tasty burger sauce (see recipe here) to the bottom bun 
  2. Place one cheeseburger
  3. Add another layer of tasty burger sauce 
  4. Place another cheeseburger
  5. Add a layer of caramelized onions (see recipe here)
  6. Add one more layer of tasty burger sauce and top off with the crown!
