Ingredients

- Short Rib
- Chuck
- Brioche Buns
- Butter
- Sliced Cheddar Cheese
Method
- Begin by cutting the bone off the short ribs.
- Cut the chuck into approximately 2-inch pieces, leaving the fat intact.
- Place all the meat onto a pan layered with parchment paper.
- Transfer the pan to the freezer and let the meat chill for about 30 minutes.
- Once chilled, use a food processor or blender to grind up the meat until desired consistency is achieved.
- Shape the ground meat into large patties, forming them into approximately 5×5-inch balls.
Toast the Buns
- Spread 2 tablespoons of butter evenly on the bottom of a separate pan.
- Cut the brioche buns in half and place them cut-side down in the pan to toast and absorb the butter.
- Set the toasted buns aside.
Cook the Burgers
- In the same pan, cook the burger patties. Use your hands or a spatula to flatten them if they are still firm.
- Add a dash of olive oil, salt, and pepper to each side of the patty for seasoning.
- Place a slice of cheddar cheese on top of each patty.
- Cover the pan and let the cheese melt into the meat for a few minutes.
Layering the Burger…
- Add a layer of tasty burger sauce (see recipe here) to the bottom bun
- Place one cheeseburger
- Add another layer of tasty burger sauce
- Place another cheeseburger
- Add a layer of caramelized onions (see recipe here)
- Add one more layer of tasty burger sauce and top off with the crown!
