Avocado Toast

Ingredients

  • 1 red onion
  • 1 tbsp sugar
  • ½ cup white vinegar
  • ½ cup apple cider vinegar
  • Toast
  • 1 avocado
  • Butter
  • Grain bread
  • 1 clove minced garlic
  • 1 lemon wedge
  • Salt and pepper

Method

Pickled Onions:

  1. Using a mandolin, slice the red onion into very thin slices.
  2. In a small saucepan, bring the white vinegar, apple cider vinegar, and sugar to a boil.
  3. Place the sliced onions in a bowl and pour the hot vinegar mixture over them.
  4. Let the onions sit in the pickling liquid for about 30 minutes, allowing them to pickle.

Toasted Bread:

  1. Butter one side of a piece of grain bread.
  2. Heat a skillet over medium heat and place the buttered bread slice in the skillet.
  3. Toast both sides of the bread until golden brown and crispy.

Avocado Spread:

  1. In a bowl, mash the avocado until smooth.
  2. Add the minced garlic and squeeze the juice from a lemon wedge into the bowl.
  3. Season with salt and pepper to taste.
  4. Mix all the ingredients together until well combined.

Assembly:

  1. Take the toasted bread and spread the avocado mixture evenly on one side.
  2. Place some of the pickled onions on top of the avocado spread. Enjoy!
