Ingredients

- 1 red onion
- 1 tbsp sugar
- ½ cup white vinegar
- ½ cup apple cider vinegar
- Toast
- 1 avocado
- Butter
- Grain bread
- 1 clove minced garlic
- 1 lemon wedge
- Salt and pepper

Method
Pickled Onions:
- Using a mandolin, slice the red onion into very thin slices.
- In a small saucepan, bring the white vinegar, apple cider vinegar, and sugar to a boil.
- Place the sliced onions in a bowl and pour the hot vinegar mixture over them.
- Let the onions sit in the pickling liquid for about 30 minutes, allowing them to pickle.
Toasted Bread:
- Butter one side of a piece of grain bread.
- Heat a skillet over medium heat and place the buttered bread slice in the skillet.
- Toast both sides of the bread until golden brown and crispy.
Avocado Spread:
- In a bowl, mash the avocado until smooth.
- Add the minced garlic and squeeze the juice from a lemon wedge into the bowl.
- Season with salt and pepper to taste.
- Mix all the ingredients together until well combined.
Assembly:
- Take the toasted bread and spread the avocado mixture evenly on one side.
- Place some of the pickled onions on top of the avocado spread. Enjoy!
