Ingredients

  • 6 Eggs
  • Fried Chicken Nuggets (store-bought or homemade)
  • 3 tbsp Mayonnaise
  • 1 ½ tsp Dijon Mustard
  • 2 tsp Pickle Juice
  • 1 ½ tbsp Unsalted Butter, softened
  • BBQ Sauce
  • Scallions, chopped (for garnish)
  • Salt and Pepper to taste

Method

1. Preparing the Ingredients:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Peel and chop the potatoes into small pieces.
  3. Chop the scallions.

2. Cooking the Sausage and Potatoes:

  1. Heat some oil in a skillet over medium heat.
  2. Add the pork sausage to the skillet, breaking it up into smaller pieces.
  3. Cook the sausage until it is thoroughly browned and cooked through.
  4. Add the chopped potatoes to the skillet and season with pepper.
  5. Cover the skillet with a lid to help soften the potatoes faster.
  6. Cook until the potatoes are tender and lightly browned, stirring occasionally.
  7. Add the chopped scallions to the skillet and stir to incorporate the ingredients.

3. Adding the Eggs and Baking:

  1. Using a spoon, create 5 small spots in the skillet for the eggs.
  2. Crack each egg directly into each prepared spot in the skillet.
  3. Place the skillet in the preheated oven.
  4. Bake for about 12 minutes or until the eggs are cooked to your desired doneness.
  5. Keep an eye on the eggs while baking to avoid overcooking.

4. Serving:

  1. Once the eggs are cooked, remove the skillet from the oven.
  2. Serve the Sausage, Egg, and Potato Skillet hot.
  3. You can garnish with additional chopped scallions or your preferred herbs, if desired.
