Tomahawk Steak

Ingredients

  • 1 Tomahawk steak
  • Hickory chunks (for smoking)
  • ½ tsp rosemary
  • ½ tsp parsley
  • 3 cloves of garlic, minced
  • 1 stick of butter, softened
  • 1 tsp Worcestershire sauce
  • Kosher salt
  • Pepper

Method

1. Preparing the Grill:

  1. Soak hickory chunks in water for about 45 minutes to ensure they produce smoke during grilling.
  2. Preheat your grill to high heat for direct grilling.

2. Seasoning the Steak:

  1. Season both sides of the tomahawk steak generously with kosher salt and pepper. Pat the seasonings into the meat to ensure they adhere well.

3. Grilling the Steak:

  1. Place the soaked hickory chunks directly on the charcoal to create smoke.
  2. Place the seasoned tomahawk steak on the grill over direct heat. Allow the steak to cook, flipping it occasionally, until it develops a nice sear and char on the outside. This can take around 4-5 minutes per side.
  3. Once the steak has a beautiful crust and the internal temperature reaches about 122 degrees Fahrenheit (50 degrees Celsius), remove it from the grill.

4. Finishing in the Oven:

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. Wrap a baking pan with foil and transfer the seared tomahawk steak onto the pan.
  3. Place the steak in the preheated oven and continue cooking until it reaches your desired doneness. Use a meat thermometer to check the internal temperature. For medium-rare, aim for around 130-135 degrees Fahrenheit (55-57 degrees Celsius). Cooking times will vary depending on the thickness of the steak.

5. Preparing the Compound Butter:

  1. In a bowl, mix softened butter, minced garlic, Worcestershire sauce, parsley, and rosemary leaves. Use your hands or a fork to thoroughly incorporate all the ingredients.

6. Serving the Steak:

  1. Once the steak reaches your desired doneness, remove it from the oven and let it rest for a few minutes to allow the juices to redistribute.
  2. Slice the tomahawk steak by cutting along the bone, separating the meat from the bone. Remove any large pieces of fat if desired.
  3. Cut the steak into 2-inch thick slices and spread the prepared compound butter over the top of each slice.
  4. Serve the juicy and flavorful tomahawk steak with the compound butter on the side. This impressive and delicious steak is sure to be a hit!
