Bourbon Bacon Jam

Ingredients

  • 1 1/2 lb bacon
  • 1/2 tsp cayenne
  • 1 large yellow onion
  • 1 tbsp balsamic vinegar
  • 1/4 cup bourbon
  • 1/2 cup dark brown sugar
  • 2 cloves minced garlic
  • 1/4 cup strong coffee
  • Salt & Pepper

Method

This dish is minor-safe: all the alcohol cooks out!

Cooking the Bacon and Onions:

  1. Cut the bacon into bite-sized pieces and chop the onion into slices.
  2. In a skillet, cook the bacon on medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel to drain excess grease.
  3. Pour off all but 1-2 tablespoons of the bacon grease in the skillet. Add the onions to the skillet and cook until they are browned.

Adding the Flavorful Ingredients:

  1. Once the onions are browned, add the brown sugar, bourbon, coffee, balsamic vinegar, minced garlic, and cayenne pepper to the skillet.
  2. Stir the mixture well and cook until most of the moisture has evaporated, and the mixture has thickened.

Finishing Touches:

  1. Add salt and pepper to taste, adjusting the seasoning as desired.
  2. Cook the mixture for an additional 1-2 minutes after adding the garlic.
  3. Pour the finished bourbon bacon jam into a jar and let it cool.
  4. Store the jam in the refrigerator until ready to use.
