Ingredients

- 1 1/2 lb bacon
- 1/2 tsp cayenne
- 1 large yellow onion
- 1 tbsp balsamic vinegar
- 1/4 cup bourbon
- 1/2 cup dark brown sugar
- 2 cloves minced garlic
- 1/4 cup strong coffee
- Salt & Pepper

Method
This dish is minor-safe: all the alcohol cooks out!
Cooking the Bacon and Onions:
- Cut the bacon into bite-sized pieces and chop the onion into slices.
- In a skillet, cook the bacon on medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel to drain excess grease.
- Pour off all but 1-2 tablespoons of the bacon grease in the skillet. Add the onions to the skillet and cook until they are browned.
Adding the Flavorful Ingredients:
- Once the onions are browned, add the brown sugar, bourbon, coffee, balsamic vinegar, minced garlic, and cayenne pepper to the skillet.
- Stir the mixture well and cook until most of the moisture has evaporated, and the mixture has thickened.
Finishing Touches:
- Add salt and pepper to taste, adjusting the seasoning as desired.
- Cook the mixture for an additional 1-2 minutes after adding the garlic.
- Pour the finished bourbon bacon jam into a jar and let it cool.
- Store the jam in the refrigerator until ready to use.
