Ingredients

- ½ tsp red chili flakes
- 2 tbsp chili garlic sauce
- ½ cup sugar
- ½ stick of butter
- ½ cup water
- ½ cup rice vinegar
- 1 tbsp raw honey
- Cornstarch (for thickening)
- 4 corn cobs

Method
1. Prepare the Sweet Chili Sauce:
- In a small pot, combine the water, rice vinegar, red chili flakes, chili garlic sauce, sugar, honey, butter, and garlic.
- Cook the mixture over medium heat for about 10 minutes, stirring occasionally until the sugar is dissolved and the flavors are well combined.
2. Thicken the Sauce:
- In a separate small bowl, mix some cornstarch with cold water to create a slurry.
- Slowly pour the cornstarch slurry into the pot with the sauce while stirring continuously.
- Cook for another 2-3 minutes until the sauce thickens to your desired consistency. Remove from heat and let it cool for a few minutes.
3. Marinate and Grill the Corn:
- Place the corn cobs in a large ziplock bag and pour most of the sweet chili sauce inside, reserving a small amount for later use.
- Close the bag tightly and gently massage the corn to ensure it is coated evenly with the sauce. Allow it to marinate for about 10 minutes.
- Preheat your grill to medium-high heat.
- Place the marinated corn cobs on the grill and cook for approximately 10-15 minutes, turning occasionally, until the corn is tender and lightly charred.
- While grilling, brush the remaining sweet chili sauce over the corn for extra flavor and glaze.
4. Serve:
- Once the corn is grilled to perfection, remove from the grill and transfer to a serving plate.
- Optionally, you can brush any remaining sauce over the corn for an extra burst of flavor.
- Serve as a tasty and flavorful side dish to accompany your meal.
