Oklahoma Onion Burger

Ingredients

  • 1 large onion
  • Short ribs
  • Brisket
  • Chuck
  • Salt & pepper

Method

Preparing the Onion:

  1. Use a mandolin to slice the onion into very thin slivers.
  2. Wrap the onion slivers in a paper towel and press gently to remove excess moisture. Set aside.

Grinding and Shaping the Meat:

  1. Freeze the brisket, chuck, and short ribs for easier grinding.
  2. Grind only half of the frozen brisket using a meat grinder or food processor.
  3. Shape the ground meat into balls, weighing approximately 3.5 oz each.

Cooking the Patties:

  1. Heat up a skillet or griddle over medium heat.
  2. Generously rub a stick of butter over the cooking surface to grease it.
  3. Place the burger buns on the heated surface to toast them lightly. Set aside.
  4. Repeat the butter step to ensure the cooking surface remains greased.
  5. Place the balls of meat on the greased surface and cover them with the onion slivers.
  6. Use a spatula or burger press to flatten the balls, smashing them down and holding for 10-15 seconds.
  7. Sprinkle the patties with salt and pepper for seasoning.
  8. Once the bottoms of the patties develop a caramelized char, carefully flip them over to cook the other side.

Assembling the Burgers:

  1. Spread tasty burger sauce on the insides of the toasted burger buns.
  2. Add pickle slices on top of the sauce.
  3. Place a cooked patty on top of the pickles.
  4. Optionally, add additional toppings such as lettuce, tomato, or cheese if desired.
  5. Finish assembling the burger with the top half of the bun.
