Ingredients

- 1 large onion
- Short ribs
- Brisket
- Chuck
- Salt & pepper
- Tasty Burger Sauce
- Pickles
- Burger buns
- Butter

Method
Preparing the Onion:
- Use a mandolin to slice the onion into very thin slivers.
- Wrap the onion slivers in a paper towel and press gently to remove excess moisture. Set aside.
Grinding and Shaping the Meat:
- Freeze the brisket, chuck, and short ribs for easier grinding.
- Grind only half of the frozen brisket using a meat grinder or food processor.
- Shape the ground meat into balls, weighing approximately 3.5 oz each.
Cooking the Patties:
- Heat up a skillet or griddle over medium heat.
- Generously rub a stick of butter over the cooking surface to grease it.
- Place the burger buns on the heated surface to toast them lightly. Set aside.
- Repeat the butter step to ensure the cooking surface remains greased.
- Place the balls of meat on the greased surface and cover them with the onion slivers.
- Use a spatula or burger press to flatten the balls, smashing them down and holding for 10-15 seconds.
- Sprinkle the patties with salt and pepper for seasoning.
- Once the bottoms of the patties develop a caramelized char, carefully flip them over to cook the other side.
Assembling the Burgers:
- Spread tasty burger sauce on the insides of the toasted burger buns.
- Add pickle slices on top of the sauce.
- Place a cooked patty on top of the pickles.
- Optionally, add additional toppings such as lettuce, tomato, or cheese if desired.
- Finish assembling the burger with the top half of the bun.
