Ingredients

- 2 lbs Chicken Breasts
- 2/3 of 28 oz can of Diced Tomatoes and Chillies
- 10.5 oz (1 can) Cream Cheese Soup
- 10.5 oz (1 can) Chicken Broth Mix
- 3 tbsp. Chili Powder
- 1 Onion
- 1 Green Pepper
- 1 Bag of Doritos
- 14 oz Mexican Cheese Blend
Method
Preparing the chicken
- Very slowly boil chicken breasts, bringing them up to 160°F.
- Cut chicken breast into thirds and pull them apart to make bite-sized pieces of shredded chicken.
Putting together the soup
- Slice green peppers and onion into thin strips
- Put cream of chicken soup, chicken broth mix, diced tomatoes, chilies, chili powder, sliced peppers, and sliced onions into a sauce pan. Use some of the chicken broth mix to get the rest of the cream of chicken soup out of the can then pour the rest of the broth into the sauce pan freely. save a few pepper slices for later
- Heat the sauce pan up to 350°F
Finishing the casserole
- Place a layer of shredded chicken into a casserole dish
- Put a layer of Doritos on top of the chicken
- Pour a layer of soup on top of the Doritos using a soup spoon
- Sprinkle a layer of cheese on top of the soup
- Repeat steps 1-4 to create the second layer
- Add a couple slices of pepper on top
- Pre-heat the oven to 350°F and cook for 45-60 minutes
- Let the casserole cook for 10 minutes. Enjoy!
