Strawberry Jalapeño Chicken

Ingredients

Total ingredients list and portions:

  • 16 oz strawberries, cubed
  • 3-4 jalapeños
  • 2 shallots, diced
  • grape seed oil
  • 1-2 lbs chicken, cubed (about 4 chicken breasts)
  • salt
  • pepper
  • 3/4 tsp garlic powder
  • cilantro
  • 2 tbsp honey
  • 2 tbsp BBQ sauce
  • 1/2 cup balsamic vinegar
  • chipotle peppers in adobe sauce

Ingredients for the sauce only

  • 1 cup strawberries, cubed
  • 1/3 cup jalapeños
  • 2 tbsp shallots
  • 1 tbsp balsamic vinegar
  • 1 pinch of salt

* note: the total amount of each ingredient from the previous list above remains the same throughout the entire recipe. This list shows the specific portions for only the sauce, which are taken from the original portions listed above. (ex: the 1 cup of strawberries was taken from the 16 oz total of strawberries, leaving the remainder behind)

Method

Preparing the jalapeños

  1. cut the jalapeños in half
  2. cut out the seeds and throw them away
  3. remove the tops
  4. dice them into small pieces

Making the sauce

* note: find specific ingredients portions for the sauce in the second ingredients list above

  1. put shallots, strawberries, jalapeños, balsamic vinegar, and salt into a bowl
  2. mix and set aside

Preparing the chicken

  1. pour grape seed oil onto the pan on the stove and heat it up
  2. place chicken on pan and sprinkle 2 pinches of salt, 3 cracks of pepper, and garlic powder
  3. cook chicken at 165°F and make sure the pieces are fully cooked before placing them on a plate and setting it aside

Finishing the dish

  1. put remainder of shallots and jalapeños onto pan
  2. cook for 2 minutes to get them soft and mix
  3. add remainder of vinegar and strawberries into the pan, along with BBQ sauce, honey, 3 heaping spoons of chipotle peppers in adobo sauce, and cilantro.
  4. cook for 7-8 minutes and stir
  5. put chicken in the pan and coat it with the mixture
  6. add 1 more tsp of chipotle peppers in adobo sauce and mix
  7. put everything in a plate and cover with some sauce, adding a pinch of cilantro. Enjoy!
