Butternut Squash with Spaghetti and Chicken

Ingredients

  • water
  • spaghetti noodles
  • 1 butternut squash
  • 2-3 tbsp butter
  • 1 onion, diced
  • 1-2 cups flour
  • 1/2 tsp salt
  • 1/2 smoked paprika
  • 1/4 tsp pepper 4-5 strips bacon
  • 2 chicken breasts
  • 3 garlic cloves, minced
  • any desired amount of cheese, grated
  • parsley

Method

Cutting and Cooking the Squash

  1. cut squash in half, cleaning out the seeds with a spoon
  2. cook each half for at least 10-20 minutes in a microwave. to ensure that the squash is fully cooked, insert a fork into the flesh and the squash should be soft and tender

Making the Spaghetti Sauce

  1. cook some bacon on a pan and remove the bacon, keeping the grease
  2. add diced onions to the pan with the bacon grease and heat up the stove once again
  3. put in garlic and mix
  4. drain the grease using a strainer and dump the grease back into the pan, putting the garlic and onions to the side
  5. scoop out the flesh of the squash, put it in a food processor, and blend
  6. add the cream in and blend again
  7. put the garlic and onion mixture in and blend one last time

Cooking the Spaghetti and the Chicken

  1. put flour, salt, smoked paprika, and pepper into a plate and mix
  2. coat the chicken breasts with this dry mixture and put them aside on a plate
  3. put water in a pot and cook the spaghetti
  4. fry the chicken breasts on the pan with the bacon grease and use a thermometer to make sure they are 165°F throughout the entire chicken, then put them to the side

Finishing Off the Dish

  1. add the squash blend into the pan and heat it on low, adding a few ladles of spaghetti water to thin it out while you mix
  2. add some shredded cheese and salt and mix
  3. cut some of the chicken, any amount you desire for your dish, into thick strips
  4. lay the pasta on the plate, pour the sauce on it, and lay the chicken strips on top
  5. add some shredded bacon and parsley and enjoy!
