Ingredients

- 12 lb turkey
- water
- oil
Method
⚠️ make sure to follow safety precautions when deep frying a turkey to prevent it from blowing up or dangerously causing a fire. keep a fire extinguisher nearby in case a fire does occur.

Measuring the Amount of Oil Needed
- take the turkey and set it on a platter with the pole piercing through it, then set it in the cooking pot
- pour water into the pot, filling it just enough to cover the turkey. make sure to put water inside the turkey as well
- take the turkey out, making sure to remove all the water inside of it so it does not blow up
- mark just below the water lever with a sharpie on the inside of the pit and measure the depth of the water in inches
Setting Up the Cooking Station
- go outside and set up the cooking pot, turning the gas on and connecting it to a stove under the pot to heat it up. suspend the turkey above the pot using a ladder by inserting a hanger into the pole of the platter and tying a rope around the hanger and the ladder (demonstrated in the photo below)

Putting the Turkey In the Oil
- fill oil to the line marked in the cooking pot and heat it up to 250°F
- once you reach 250°F turn off the gas to ensure no flames and slowly suspend the turkey into the pot using the rope. cover it almost fully within the oil and tie the road to the ladder to hold this position

Frying the Turkey
- bring the temperature up to 350°F
- cook the turkey for somewhere around 45-50 minutes. make sure to watch it to prevent the turkey from burning, and once you think it’s ready, pull the turkey out and use a thermometer to make sure the internal heat is 152°F throughout the entire turkey
- take the turkey out of the pot and make sure to safely clean up the cooking space
- serve the turkey on a platter and enjoy!
