Vietnamese Caramel-Braised Chicken With Ginger

Ingredients

  • 2 3/4 ginger, cut and smashed
  • 1 shallot, sliced thinly
  • 2 cloves garlic, slice thinly
  • 4 tsp sugar
  • 2 tbsp fish sauce
  • 2 tbsp vegetable oil
  • 1 1/2 cups unsweetened coconut water
  • 2 lbs chicken
  • cilantro
  • white rice

Method

  1. Put sugar and vegetable oil on a pan on medium heat, and let it sit for 2-3 minutes until it turns gold
  2. Turn down the heat before putting in the aromatics (ginger, shallot, and garlic) and chicken
  3. Turn the heat back up and stir the chicken to get rid of the pink
  4. Put in the rest of the liquids and let it simmer for 30 minutes
  5. Scoop the dish onto white rice, top with some cilantro, and serve. Enjoy!
