Ingredients

- 2 3/4 ginger, cut and smashed
- 1 shallot, sliced thinly
- 2 cloves garlic, slice thinly
- 4 tsp sugar
- 2 tbsp fish sauce
- 2 tbsp vegetable oil
- 1 1/2 cups unsweetened coconut water
- 2 lbs chicken
- cilantro
- white rice
Method
- Put sugar and vegetable oil on a pan on medium heat, and let it sit for 2-3 minutes until it turns gold
- Turn down the heat before putting in the aromatics (ginger, shallot, and garlic) and chicken
- Turn the heat back up and stir the chicken to get rid of the pink
- Put in the rest of the liquids and let it simmer for 30 minutes
- Scoop the dish onto white rice, top with some cilantro, and serve. Enjoy!
