Grilled Grilled Cheese

Ingredients

  • 3 oz. sharp cheddar, grated
  • 3 oz. Gruyere cheese, grated
  • 1 tsp. dry mustard
  • 1/2 tsp. smoked paprika
  • 1/4 tsp. pepper
  • olive oil
  • 4 sliced sour dough bread

Method

Preparing the cheese

  1. mix the two cheeses
  2. add smoked paprika, pepper, and dry mustard to the cheeses and mix
  3. cover two spatulas with foil to form walls on each side (as shown in the picture above)
  4. split the cheese mixture in half, putting each half into a spatula

Grilling

  1. put the spatulas with cheese on a grill
  2. lay the slices of bread on a sheet of tin foil and spritz both sides of each slice with olive oil
  3. put the bread on the grill, cooking each side to a perfect crispy brown
  4. remove the spatulas once the cheese has melted
  5. take the tinfoil walls off the spatulas so you can slide the melted cheese onto two of the bread slices
  6. put each slice with cheese onto a slice without cheese
  7. wrap the sandwiches in tin foil and put on grill
  8. take the sandwiches off the grill and remove the tin foil before you enjoy!
