Ingredients

- 3 oz. sharp cheddar, grated
- 3 oz. Gruyere cheese, grated
- 1 tsp. dry mustard
- 1/2 tsp. smoked paprika
- 1/4 tsp. pepper
- olive oil
- 4 sliced sour dough bread
Method
Preparing the cheese
- mix the two cheeses
- add smoked paprika, pepper, and dry mustard to the cheeses and mix
- cover two spatulas with foil to form walls on each side (as shown in the picture above)
- split the cheese mixture in half, putting each half into a spatula
Grilling
- put the spatulas with cheese on a grill
- lay the slices of bread on a sheet of tin foil and spritz both sides of each slice with olive oil
- put the bread on the grill, cooking each side to a perfect crispy brown
- remove the spatulas once the cheese has melted
- take the tinfoil walls off the spatulas so you can slide the melted cheese onto two of the bread slices
- put each slice with cheese onto a slice without cheese
- wrap the sandwiches in tin foil and put on grill
- take the sandwiches off the grill and remove the tin foil before you enjoy!
