Ingredients

- 1/4 cup olive oil
- 5 cloves garlic
- 3 tbsp. parmesan
- 3 tbsp. Panko bread crumbs
- 1/2 tsp. pepper
- 1 tsp. salt
- 2 tsp. smoked paprika
- ketchup
- parsley
- 4 gold/russet potatoes
Method
Cutting the potatoes
- stab each potato with a skewer
- cut through each potato at an angle, keeping the knife at a certain angle as well
- once the knife hits the skewer, rotate the potato to slice a spiral, avoiding the beginning cut so you can slice through the potato in one single slice
- spread out the potato, leaving space between the slices
Preparing the wet and dry ingredients
- mince the garlic and mix it into the oil
- add Panko bread crumbs, parmesan, pepper, salt, and paprika into a bowl and mix
Baking and finishing touches
- heat the oven to 350°F
- lay the potatoes with skewers on a sheet pan and coat them with oil, making sure to get the oil in between all of the slices
- sprinkle the potatoes with the spices
- put them in the oven for about 1 hour, turning them over half-way through and adding a bit of spice wherever it’s needed
- serve the potatoes with parsley and ketchup and enjoy!
