Ingredients

- 4 lb. pork
- 80 oz. Sauer Kraut
- 6 onions
- mashed potato slurry
- 1 stick (8 tbsp.) butter
- salt
- pepper
- 2 tbsp. vegetable oil
- water
Method
Preparing the pork
- remove the tops and bottoms of 3 onions, then peel and chop them
- put salt and pepper all over the top and bottom of the pork
- turn the stove on medium
- place a sauce pan onto the stove, pouring vegetable oil in and letting it warm up
- place the meat in, adding salt and pepper to the sides that have none
- brown all 4 sides of the meat, cooking it for 4-5 minutes each side
- put the chopped onions into the pan and fill with enough water to bring it to the top of the meat
- cover the pan with a lid and let it simmer for 4 hours, cooking the Sauer kraut in a separate pan 1 hour in
Preparing the Sauer Kraut
- chop 3 onions after removing the tops and peeling them
- dump all of the Sauer kraut and chopped onions into the pan
- pour enough water into the pan to fill it to the top of the Sauer kraut and onions
- simmer for 3 hours with a lid on the pan, checking up on the dish and removing the lid when the water level gets too high, maybe about 2 1/2 hours in
Putting the Sauer Kraut and the pork together
- place the pork into the Sauer kraut, then pour some of the broth mixture from the first pan into the Sauer Kraut to top off this sauce pan
- add butter and cook for 1 1/2 hours, without a lid
- remove any bones once the time is up
- make a slurry by whisking flour and iced water in a cup, and mix it into the Sauer Kraut to thicken it up
- Serve the Pork and Sauer Kraut in a bowl before you enjoy!
