Reverse Seared Prime Ribs

Ingredients

  • prime rib
  • salt
  • 1/2 tsp pepper
  • 6-8 cloves garlic
  • rosemary
  • thyme
  • olive oil

Method

Preparing the meat

  1. salt the prime rib LIBERALLY, placing lots of salt on each side
  2. refrigerate the prime rib for 24 hours
  3. take the meat out of the fridge and let it sit out for 2 hours to bring it down to room temperature
  4. pull the leaves off of the thyme and rosemary, placing them into a spice grinder
  5. chop the garlic and place into the spice grinder, along with ground pepper
  6. blend everything until it becomes a paste
  7. pour olive oil onto the meat, spreading it all over
  8. put the blended spices onto the meat, adding a little more salt

Cooking the meat

  1. put the meat in the oven and bake it for 3-4 hours at 250°F, or until the temperature of the meat is at least 118°F throughout. make sure to check the meat at least 2 hours in to observe
  2. take the meat out and let it rest for at least 30 minutes, loosely covering it with foil
  3. pre-heat the oven to 500°F and cook the meat for 5-6 minutes
  4. cut the meat right underneath the bones, putting the portion of meat with the bones in it to the side
  5. cut the meat and serve with horse radish sauce. Enjoy!
