Hawaiian Pork Slides

Ingredients

  • 3 lb. Boston Butt
  • 8-9 cubs water
  • 2 onions
  • salt
  • pepper
  • 12 Hawaiian rolls
  • butter
  • barbeque sauce
  • 1.5 cup red cabbage
  • 1 cup green cabbage
  • 1 cup pineapple, diced
  • 1 tsp orange zest
  • 1/2 red pepper
  • 1 orange
  • 1 rib celery
  • 1 green onion
  • 3 tsp cilantro
  • 3 tbsp. mayo
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. Dijon mustard
  • 1/4 tsp. pepper
  • 1/2 tsp. onion powder
  • 1 tbsp sugar
  • 1/2 tsp. salt

Method

Preparing the pork

  1. Cut the onions
  2. heat up water in a pressure cooker
  3. place the meet into the pressure cooker
  4. add a few good pinches of salt, and some grounded pepper
  5. place the onions in the pressure cooker
  6. place the lid on the cooker, locking it and placing the weight on top
  7. heat up the stove and cook the meat for 45 minutes, only starting the timer when the weight on the top starts jiggling

Preparing the slaw

place all of the following into a large bowl:

  1. cut the skin of the pineapple off and dice
  2. dice the red pepper
  3. squeeze the juice out of half an orange
  4. separate the leaves from the cilantro and dice the leaves
  5. cut the ends off of the celery and green onion, and chop them
  6. shred the red and green cabbage with a mandolin
  7. zest the very outer skin of the orange
  8. add mayo, apple cider vinegar, Dijon mustard, onion powder, salt, sugar, and pepper into a small bowl and whisk
  9. drizzle this sauce into the large bowl of slaw and mix everything together
  10. cover the slaw and refrigerate it

Preparing the Hawaiian rolls

  1. pull apart the Hawaiian rolls and cut them all in half
  2. put the oven on broil
  3. place butter on the rolls and lay them on a sheet pan
  4. place the buns in the oven and broil

Finishing touches

  1. take the meat out of the pressure cooker when it is done and shred it, placing it into a large bowl
  2. pour some barbeque sauce onto the pork and mix
  3. place pork onto the bottom halves of the bread, pour barbeque sauce on top, add slaw, and finally add the top of the bread halves. Pierce everything with a stick to keep it all together while you enjoy!
