Ingredients

- 3 tbsp. butter
- 3 tbsp. flour
- 1 celery stalk
- 2 cups onion, chopped
- 1 tbsp (6 cloves) garlic
- 1 lb. crab, chopped
- 1/2 tsp. Cajun seasoning
- 1/2 tsp liquid crab boil
- 2 cups/ 1 pint heavy cream
- 2 cups/ 1 pint whole milk
- 1 cup clam sauce/clam juice
- 1 cup chicken broth
- 1 1/2 cup corn
- 1/2 cup green onions
- 2 bay leaves
- sliced lime
- salt
- pepper

Method
Preparing the rue
- place a pan on a stove and turn on the heat
- put in butter, and cook for 5-7 minutes to fully melt
- slowly put in small scoops of flour while continuing to stir for about 5-7 minutes. It should end up a golden brown color
Cooking
- put olive oil into a Dutch oven and heat up the stove
- put in celery, onions, a pinch of salt, pepper, and garlic, saving the garlic for last. make sure to keep stirring
- put in Cajun seasoning, chicken broth, clam sauce, corn, and bay leaves. cook for a little more and stir
- put in heavy cream, milk, and crab boil. stir and let everything simmer for 7-8 minutes
- put in the rue, and stir and cook for 6-8 minutes
- put in crab, Worcestershire sauce, and green onions and cook for 6-8 minutes, continuing to stir
- taste and add salt or pepper if needed
- remove the bay leaves
- serve the dish in a bowl, topping it with a couple slices of lime before you enjoy!
