Cajun Corn and Crab Bisque

Ingredients

  • 3 tbsp. butter
  • 3 tbsp. flour
  • 1 celery stalk
  • 2 cups onion, chopped
  • 1 tbsp (6 cloves) garlic
  • 1 lb. crab, chopped
  • 1/2 tsp. Cajun seasoning
  • 1/2 tsp liquid crab boil
  • 2 cups/ 1 pint heavy cream
  • 2 cups/ 1 pint whole milk
  • 1 cup clam sauce/clam juice
  • 1 cup chicken broth
  • 1 1/2 cup corn
  • 1/2 cup green onions
  • 2 bay leaves
  • sliced lime
  • salt
  • pepper

Method

Preparing the rue

  1. place a pan on a stove and turn on the heat
  2. put in butter, and cook for 5-7 minutes to fully melt
  3. slowly put in small scoops of flour while continuing to stir for about 5-7 minutes. It should end up a golden brown color

Cooking

  1. put olive oil into a Dutch oven and heat up the stove
  2. put in celery, onions, a pinch of salt, pepper, and garlic, saving the garlic for last. make sure to keep stirring
  3. put in Cajun seasoning, chicken broth, clam sauce, corn, and bay leaves. cook for a little more and stir
  4. put in heavy cream, milk, and crab boil. stir and let everything simmer for 7-8 minutes
  5. put in the rue, and stir and cook for 6-8 minutes
  6. put in crab, Worcestershire sauce, and green onions and cook for 6-8 minutes, continuing to stir
  7. taste and add salt or pepper if needed
  8. remove the bay leaves
  9. serve the dish in a bowl, topping it with a couple slices of lime before you enjoy!
