Chicken Piccata

Ingredients

  • 3 chicken breasts, skinless and boneless
  • 2 lemons
  • 1/2 shallot, diced
  • 1 clove garlic, minced
  • 1 cup chicken broth
  • 2 tbsp capers
  • 3 tbsp butter, softened
  • flour
  • couple tsp salt
  • 1/2 tsp pepper
  • grapeseed oil
  • parsley

Method

Preparing the ingredients

  1. put the chicken in the freezer for 15-20 minutes
  2. mince the garlic
  3. dice the shallot
  4. cut the lemon in at least 4 to 5 1/8-inch-slices
  5. squeeze the lemon to get 1/4 cup of lemon juice
  6. slice the chicken into long and wide strips
  7. put the strips under saran wrap and mash them with a meat hammer, then set aside in a bowl
  8. add salt and pepper to the chicken and mix, then let it sit

Cooking

  1. coat the chicken with flour and set it on a wire rack on top of a sheet pan, then set aside
  2. cut the butter into thin slices
  3. fry the chicken for 2-3 minutes to get both sides to a nice brown, then set aside
  4. put in more oil, then add shallots and cook for 1 minute
  5. put in garlic and cook for 20 seconds
  6. add chicken broth, lemon juice, and lemons slices, bringing it to a simmer
  7. add the chicken and cook for 45 minutes
  8. put in capers, parsley, and butter, letting it melt in the heat
  9. serve in a plate and add some garnish before you enjoy!
