Carrot Ginger Soup

Ingredients

  • 1 lb. carrots, diced
  • 1/2 yellow onion, diced
  • 1 tsp ginger, grated
  • 1/2 tsp salt
  • about 1/4 tsp cracked pepper
  • 1 tbsp apple cider vinegar
  • 3 cups vegetable broth
  • 1 tsp maple syrup
  • 4 cloves garlic, chopped
  • a couple tbsps. of olive oil
  • cream and garnish

Method

  1. add olive oil to a sauce pan and add chopped onions, salt, and ground pepper
  2. cook for 8 minutes to sweat everything down
  3. add garlic and carrots, then cook for 8 more minutes, stirring occasionally
  4. add apple cider vinegar, vegetable broth, and ginger
  5. bring it to a boil, then turn it down and simmer for 30 minutes
  6. turn off the gas and let it cool for 5 minutes
  7. pour the mixture into a blender and blend for at least 30 seconds. it is recommended to open the spout and cover it with a paper towel to ensure the pressure does not build up too much
  8. add some water if needed to thin up the mixture, then add some maple syrup and blend
  9. serve the soup in a bowl and add some drops of cream and some garnish on top before you enjoy!
