Ingredients

- 1 lb. carrots, diced
- 1/2 yellow onion, diced
- 1 tsp ginger, grated
- 1/2 tsp salt
- about 1/4 tsp cracked pepper
- 1 tbsp apple cider vinegar
- 3 cups vegetable broth
- 1 tsp maple syrup
- 4 cloves garlic, chopped
- a couple tbsps. of olive oil
- cream and garnish
Method
- add olive oil to a sauce pan and add chopped onions, salt, and ground pepper
- cook for 8 minutes to sweat everything down
- add garlic and carrots, then cook for 8 more minutes, stirring occasionally
- add apple cider vinegar, vegetable broth, and ginger
- bring it to a boil, then turn it down and simmer for 30 minutes
- turn off the gas and let it cool for 5 minutes
- pour the mixture into a blender and blend for at least 30 seconds. it is recommended to open the spout and cover it with a paper towel to ensure the pressure does not build up too much
- add some water if needed to thin up the mixture, then add some maple syrup and blend
- serve the soup in a bowl and add some drops of cream and some garnish on top before you enjoy!
