Ingredients

- 1 lb lean ground beef
- 28 oz. red enchilada sauce
- 15 oz. can refried beans
- 2 small cans of green chillies
- 2 bags original Fritos
- McCormick taco seasoning
- 1 tbsp garlic powder
- 1 medium onion, diced
- 1 lb. Monterey Jack cheese
- oil
Method
Preparing the taco mix
- pour oil into a pan on the stove and heat it up
- put ground beef into the pan and mush the beef
- add minced onions and mix into the meat
- preheat the oven to 350°F
- cook the meat until brown before adding enchilada sauce
- mix the sauce into the meat and cook for a few more minutes
- add taco seasoning then mix
- add garlic powder and mix and cook some more
- turn off the heat and put the mixture to the side
Preparing the casserole
- put 1 1/2 bags of Fritos into an aluminum casserole pan, flattening them to create a bottom layer
- pour the taco mix over the Fritos and spread out evenly
- add the refried beans on top
- place the chilies on top
- grate the Monterey Jack and sprinkle it all over the casserole
- cook in the oven for 20-30 minutes at 350°F
- after taking it out of the oven, let it rest and cool down for a few minutes
- serve a piece of the casserole in a bowl, adding some sour cream and green onions before you enjoy!
