Completely handmade pasta
Ingredients

- 2 cups flour, sifted
- 3 large eggs
- 1/2 tsp salt
- 1/2 tbsp olive oil
- olive oil (for drizzling)
- parsley
- parmesan
Method
- pour the flour onto a cooking board a form a volcano shape
- add the eggs in the middle, then add salt and oil
- light whisk the eggs with a fork
- start bringing the flour into the eggs and mix it with your hands
- once the eggs are not runny, start kneading the dough for 8-10 minutes. use water if needed
- let the dough rest covered in plastic wrap for 30 minutes
- sprinkle flour on the board and divide the dough into four pieces
- roll out one piece of dough into a very thing sheet
- cut the dough into linguini sized strips
- repeat steps 8 and 9 for each piece of dough
- boil some water and cook the pasta for 1-2 minutes after you lightly salt it
- drizzle olive oil on the pasta, add parsley, and top with grated parmesan before you enjoy!
Pasta made with KitchenAid
Ingredients

- 2.5 cups all-purpose flour, sifted
- 1 cup semolina flour
- 1/2 tsp salt
- 1 tbsp water
- 4 large eggs
Method
- add the 2 types of flour into the KitchenAid bowl, then add salt, water, and eggs
- mix onsetting 1 for 30 seconds, then use the dough hook and mix four 2 minutes
- take the dough out and kneed with your hands for 1-2 minutes. add water if needed
- seal the dough with plastic wrap and let it sit for 20-30 minutes
- cut the dough into 4 pieces and thin each piece using the electric past thinner
- once thinned, use the electric spaghetti cutter to cut the dough into thin slices. Enjoy!
