Completely handmade pasta

Ingredients

  • 2 cups flour, sifted
  • 3 large eggs
  • 1/2 tsp salt
  • 1/2 tbsp olive oil
  • olive oil (for drizzling)
  • parsley
  • parmesan

Method

  1. pour the flour onto a cooking board a form a volcano shape
  2. add the eggs in the middle, then add salt and oil
  3. light whisk the eggs with a fork
  4. start bringing the flour into the eggs and mix it with your hands
  5. once the eggs are not runny, start kneading the dough for 8-10 minutes. use water if needed
  6. let the dough rest covered in plastic wrap for 30 minutes
  7. sprinkle flour on the board and divide the dough into four pieces
  8. roll out one piece of dough into a very thing sheet
  9. cut the dough into linguini sized strips
  10. repeat steps 8 and 9 for each piece of dough
  11. boil some water and cook the pasta for 1-2 minutes after you lightly salt it
  12. drizzle olive oil on the pasta, add parsley, and top with grated parmesan before you enjoy!

Pasta made with KitchenAid

Ingredients

  • 2.5 cups all-purpose flour, sifted
  • 1 cup semolina flour
  • 1/2 tsp salt
  • 1 tbsp water
  • 4 large eggs

Method

  1. add the 2 types of flour into the KitchenAid bowl, then add salt, water, and eggs
  2. mix onsetting 1 for 30 seconds, then use the dough hook and mix four 2 minutes
  3. take the dough out and kneed with your hands for 1-2 minutes. add water if needed
  4. seal the dough with plastic wrap and let it sit for 20-30 minutes
  5. cut the dough into 4 pieces and thin each piece using the electric past thinner
  6. once thinned, use the electric spaghetti cutter to cut the dough into thin slices. Enjoy!
