Cousin Eddie’s Sweet Potato Toast

Ingredients

  • 3 sweet potatoes, peeled
  • chopped walnuts
  • marshmallows
  • 1 cup brown sugar
  • bread
  • cinnamon
  • butter

Method

  1. cut the sweet potatoes into 1/2 inch slices
  2. put them in a pot and boil, then add brown sugar and butter and cook for 20 minutes
  3. put half of them in a skillet, laying them flat, then add half of the liquid
  4. broil in the oven at 350°F until crispy
  5. mash the potatoes in the pot and spread them onto toast
  6. put some brown sugar, walnuts, and cinnamon on each slice of toast
  7. take the skillet out of the oven and mash the potatoes, then spread it on the toast
  8. add a bit of cinnamon and some Marshmallows, using a blow torch to toast them
  9. serve on a plate and enjoy!
