Pasta Carbana

Ingredients

  • spaghetti
  • Pancetta, dices
  • 3 eggs
  • Pecorino Romano
  • 1 garlic clove
  • 1 tsp. Black pepper

Method

  1. grind the pepper and put it into a medium bowl, putting some to the side for the end
  2. start boiling some water for the pasta
  3. crush the garlic and put it in a cold pan, then turn the heat on medium
  4. add the pancetta into the pan and let it cook for a few minutes
  5. put the eggs in a bowl and add at least 1/4 cup of grated Pecorino, then whisk
  6. cook the pasta for about 8 minutes, then put it into a bowl
  7. pull the garlic out of the pan with pancetta, then cool down the pan some
  8. add the pasta to the pan and add 1/2 ladles of pasta water
  9. once the pasta is a little cooled down, drizzle the eggs in while mixing the pasta
  10. pour in some more grated cheese, add pepper, and mix
  11. serve the pasta in a bowl and top with a little bit of pepper and some grated Pecorino before you enjoy!
