Ingredients

- spaghetti
- Pancetta, dices
- 3 eggs
- Pecorino Romano
- 1 garlic clove
- 1 tsp. Black pepper
Method
- grind the pepper and put it into a medium bowl, putting some to the side for the end
- start boiling some water for the pasta
- crush the garlic and put it in a cold pan, then turn the heat on medium
- add the pancetta into the pan and let it cook for a few minutes
- put the eggs in a bowl and add at least 1/4 cup of grated Pecorino, then whisk
- cook the pasta for about 8 minutes, then put it into a bowl
- pull the garlic out of the pan with pancetta, then cool down the pan some
- add the pasta to the pan and add 1/2 ladles of pasta water
- once the pasta is a little cooled down, drizzle the eggs in while mixing the pasta
- pour in some more grated cheese, add pepper, and mix
- serve the pasta in a bowl and top with a little bit of pepper and some grated Pecorino before you enjoy!
