Prime Rib
Ingredients

- 2 prime ribs
- salt
- rosemary
- thyme
- olive oil
Method
- rinse off the rime ribs, pat them dry, then add salt
- cut the bones off the roast, then tie them back onto the roast using string
- salt the prime ribs and pram them in saran wrap, then let them sit for 1 hour
- pull the rosemary off the stems
- coat the ribs with olive oil and cover them with rosemary and thyme, coat the sides with salt
- cook in the oven at 500°F for 15 minutes, then turn down to 325°F and cook until the meat temperature is 122°F – 130°F for medium rare, or 132°F – 140°F for medium
- once the roasts are done cooking and sitting, cut the strings off and slices the meat.

Ham
Ingredients

- ham
- honey
- brown sugar
- balsamic vinegar
- pineapple
- cherries
Method
- unwrap the ham and place it on a cooking board
- slice some pineapple into donut shapes
- using toothpicks, cover the ham all over with pineapple slices, adding a cherry in the holes of each slice
- grill the ham at 250°F – 275°F until fully cooked
