Ingredients

- 20 Gyoza dumplings, frozen
- 4 cups chicken broth
- 14 oz. coconut milk
- 4 cloves garlic, chopped
- 1 tsp ginger, grated
- 3 tbsp Thai red curry paste
- 1 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp low sodium soy sauce
- 1 tsp brown sugar
- 1 tbsp toasted sesame oil
- 1/4 cup cilantro
- 1 tbsp olive oil

Method
- pour olive oil into a sauce pot on the stove and put it on medium
- once oil is warm, dump in the garlic and ginger and cook for 2 minutes or so, making sure not to brown anything
- pour in the chicken broth and the coconut milk, stir them, then simmer for 5 minutes
- put in chili paste, lime juice, fish sauce, soy sauce, toasted sesame oil, and brown sugar
- stir the soup then simmer for 5 to 6 minutes
- put in the frozen Gyozas and cook for 7 minutes, or until they float to the top
- serve the soup in a bowl and top with some cilantro before you enjoy!
