Quesadilla Dips

Ingredients

Salsa:

  • 2 tbsp chipotle peppers
  • 2 tbsp red onions
  • 2 tbsp green onions
  • 1/4 tsp dried oregano
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 serrano pepper, chopped
  • 1 tsp red wine vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp cilantro, chopped
  • 28 oz crushed roasted tomatoes

Guacamole:

  • 3 avocados
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • red onions, diced
  • 1/2 tomatoes, diced
  • 1/4 tsp salt
  • 2 tbsp cilantro
  • chopped serranoes

Method

Salsa

  1. pour the tomatoes in a large bowl, then add all of the other ingredients
  2. mix it up well, taste, then add salt or anything else if needed
  3. cover up the salsa, let it sit and melt, then put it in the fridge to store for later

Guacamole

  1. cut the avocados in half and remove the seed
  2. scoop out the avocado and add it to the bowl
  3. mash the avocados, leaving some chunks
  4. add the lime juice to the bowl
  5. add the salt, red onions, tomato, and cilantro into the bowl
  6. remove the tops and the seeds of the serranoes, then cut into strips and chop
  7. add the serranoes to the bowl, mix, then taste
  8. put each of the dips/sauces into a small bowl to dip and enjoy!
