Ingredients

- 2 lbs. beets
- 1 tsp salt
- 1/4 tsp pepper
- 2 cloves garlic, smashed
- 3 tbsp olive oil
- 2 bay leaves
- 12 sprigs thyme
- chives
- toasted sesame seeds
- 3/4 cups water
Lemon Tahini Dressing:
- 3 tbsp Tahini
- 1 tsp salt
- 1 tbsp water
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 tsp thyme, minced
- 2 tbsp lemon juice

Method
Preparing the beets
- cut the ends of the beets, then peel them
- slice the beets and put them into a casserole dish
- pour the water in, and put in the garlic, thyme, bay leaves, olive oil, and salt
- put foil on the dish and put it in the oven for 1 hour and 10 minutes at 450°F
- pull the dish out and remove the foil, the put it back in the oven for 15-30 minutes to brown
- let it cool for 20 minutes and remove the herbs
Preparing the Lemon Tahini Dressing
- put Tahini, salt, water, olive oil, garlic, and thyme into a small bowl, then mix
- pour in the lemon juice and mix some more
- pour the dressing on the bottom of a plate, then place the beets on top
- sprinkle toasted sesame seeds and add some chopped chives onto the beets before you enjoy!
