Roasted Beets

Ingredients

  • 2 lbs. beets
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 cloves garlic, smashed
  • 3 tbsp olive oil
  • 2 bay leaves
  • 12 sprigs thyme
  • chives
  • toasted sesame seeds
  • 3/4 cups water

Lemon Tahini Dressing:

  • 3 tbsp Tahini
  • 1 tsp salt
  • 1 tbsp water
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp thyme, minced
  • 2 tbsp lemon juice

Method

Preparing the beets

  1. cut the ends of the beets, then peel them
  2. slice the beets and put them into a casserole dish
  3. pour the water in, and put in the garlic, thyme, bay leaves, olive oil, and salt
  4. put foil on the dish and put it in the oven for 1 hour and 10 minutes at 450°F
  5. pull the dish out and remove the foil, the put it back in the oven for 15-30 minutes to brown
  6. let it cool for 20 minutes and remove the herbs

Preparing the Lemon Tahini Dressing

  1. put Tahini, salt, water, olive oil, garlic, and thyme into a small bowl, then mix
  2. pour in the lemon juice and mix some more
  3. pour the dressing on the bottom of a plate, then place the beets on top
  4. sprinkle toasted sesame seeds and add some chopped chives onto the beets before you enjoy!
