Avocado and Tomato Salad

Ingredients

  • 1 lb. grape tomatoes
  • salt
  • 3 tbsp olive oil
  • 1.5 tbsp grain mustard
  • 1/2 cup artichokes, chopped
  • 1/2 cup pistachios
  • 6-7 mint leaves
  • 6-7 basil leaves
  • 1 tbsp lemon juice
  • 1 avocado

Method

  1. cut grape tomatoes in half and put them in a strainer over a large bowl
  2. liberally put salt all over the tomatoes and gently squeeze while mixing
  3. let the tomatoes sit for 15 minutes to drain the juice into the bowl
  4. stack the mint leaves, roll them tightly, then cut them into thin little ribbons. repeat this step for the basil leaves
  5. put more salt on the tomatoes, mix and squeeze them gently, then set aside for 7-8 minutes
  6. put olive oil into the bowl with tomato juice, then add lemon juice and mustard, and stir well
  7. add the tomatoes and artichokes, and mix again
  8. cut the avocado in half, remove the pit, dice the flesh once you scoop it out, then add it to the bowl
  9. use your hands to mix the salad, then add pistachios onto it and mix again
  10. add the chopped mint and basil on top and mix well one last time
  11. serve in the salad in a bowl and enjoy!
