Ingredients

- 2 tbsp lemon juice
- 2 cups orzo
- 2 ribs celery, chopped
- 2 carrots, chopped
- 1/2 onion, chopped
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cloves garlic, minced
- 1 tbsp thyme
- 1 can Cannellini beans
- 4 cups vegetable stock
- 2 cups spinach

Method
- heat a sauce pan on a stove and put in the olive oil, onion, carrots, and the celery, then stir
- add a bit of fresh pepper and stir and cook for 6 or 7 minutes
- put in garlic and stir, then put in vegetable stock shortly after
- bring it to a simmer and add Orzo, thyme, salt, 1/4 tsp of pepper, and the beans, then stir
- simmer for 20 minutes uncovered
- taste and add salt and/or pepper if needed
- squeeze fresh lemon juice in and add spinach, then stir, turn of the heat when spinach is wilted and keep stirring
- serve in a bowl and enjoy!
