Lemon Orzo Soup

Ingredients

  • 2 tbsp lemon juice
  • 2 cups orzo
  • 2 ribs celery, chopped
  • 2 carrots, chopped
  • 1/2 onion, chopped
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cloves garlic, minced
  • 1 tbsp thyme
  • 1 can Cannellini beans
  • 4 cups vegetable stock
  • 2 cups spinach

Method

  1. heat a sauce pan on a stove and put in the olive oil, onion, carrots, and the celery, then stir
  2. add a bit of fresh pepper and stir and cook for 6 or 7 minutes
  3. put in garlic and stir, then put in vegetable stock shortly after
  4. bring it to a simmer and add Orzo, thyme, salt, 1/4 tsp of pepper, and the beans, then stir
  5. simmer for 20 minutes uncovered
  6. taste and add salt and/or pepper if needed
  7. squeeze fresh lemon juice in and add spinach, then stir, turn of the heat when spinach is wilted and keep stirring
  8. serve in a bowl and enjoy!
